Rose Coconut Cooler
A cooling drink for the hot summer months.
• | Rose syrup | 6 teaspoons |
• | Tender coconut water,chilled | 1 cup |
• | Fresh mint leaves | 12-15 |
• | Lemons,cut into small cubes | 2 |
• | Salt | to taste |
• | Tender coconut flesh (malai) | for garnish |
• | Drinking soda | as required |
Method
Combine mint leaves, lemon cubes and a little coconut water in a Boston shaker. Muddle all the ingredients with a muddler. Add rose syrup and remaining coconut water, cover and shake well.
Rim individual glasses with salt and pour the prepared drink into them. Cut coconut flesh into triangles, make a little slit on one side and fix one triangle on the rim of each glass. Top the drink with soda and serve chilled.
